COOKING

LEAVES AND STEMS - Have a mild earthy, celery flavour. Use as a very mild celery.
MATURE ROOTS - are baked or boiled as a vegetable or grated raw over dishes. They have a pure celery flavour.

CULTIVATION

Fertilise! Biennial to 1 m. Remove any spotted leaves. Harvest root when 10-15 cm in diameter.
